Refined and unrefined shea butter come from the same nut. What separates them is everything that happens after the fat is extracted, and the difference is larger than most labels suggest.
Why anyone refines it
Unrefined shea is inconsistent by nature. Colour shifts between batches, aroma varies with the roast, and texture depends on how it was cooled. For a manufacturer blending shea into a lotion with a fixed shade and scent, that variation is a problem to be removed.
Refining solves it. The output is a neutral, uniform, white fat that behaves identically drum after drum. That is a genuine engineering benefit, not a trick.
What refining does
Full refining is usually described as RBD, for refined, bleached and deodorised. Each step removes something:
- Refining strips free fatty acids, often with an alkali wash
- Bleaching pulls out the pigments through absorbent clay, taking the carotenoids with them
- Deodorising uses steam at high temperature to drive off the aromatic compounds
Much industrial shea is also solvent extracted with hexane before any of this, because a solvent pulls more oil from the same quantity of nuts than pressing does.
What it costs
The unsaponifiable fraction, which carries the vitamins and the triterpenes, does not survive that sequence intact. High heat degrades tocopherols. Bleaching clay removes carotenoids along with the colour. What comes out is still shea butter by composition, but the part that made it worth choosing over any other solid fat has been substantially reduced.
When refined is the right choice
There are honest reasons to want it. A formulator making a white cream cannot start with a yellow, nutty base. Someone who finds the natural aroma unpleasant will simply not use the product. Refined shea in a well made formulation is a reasonable ingredient, and pretending otherwise would be dishonest.
The argument is not that refined shea is bad. It is that if you are buying shea butter as shea butter, rather than as a base for something else, refining removes the reason you came.
Reading a jar
Labels are not reliable, because "pure" and "100% shea" are true of refined shea as well. The product itself is more honest than the packaging:
- Pure white and odourless means fully refined
- Ivory to yellow with a nutty smell means unrefined
- A strong smoky note usually means the kernels were over roasted
- Sharp or sour is the one to avoid, and usually means poor drying
